Chinese Roast Pork on Garlic Bread

This is one of the yummiest sandwiches!  It's quick, easy and inexpensive.  The left overs are just as good day two or use the left overs in fried rice.

1 pork tenderloin (1 1/4 lbs)
Salt and pepper
1/4 cup hoisin sauce
3 tbsp. honey
1 tsp. garlic, minced
2 tsp. seasame oil
1 loaf garlic bread
1/4 cup duck sauce

Position the rack on the lower third of the oven and preheat to 450.  Season the pork with salt and pepper.  In small bowl, combine 3 tablespoons hoisin sauce, the honey, 1 teaspoon garlic and the sesame oil; reserve half.  Place the pork and a small roasting pan and brush with the other half of the hoisin mixture.  Roast pork until temperature reaches 150° on an instant read thermometer, about 20 minutes.  Transfer to cutting board and let rest approximately 10 minutes. Slice thinly.

Meanwhile cook garlic bread according to package directions.

In a bowl, combine the remaining 1 tablespoon hoisin sauce and the reserved hoisin mixture.  Toss pork in mixture and place on top of bread, drizzle with duck sauce.  Topped with other half of garlic bread and sliced into sandwich size pieces.

I serve this with coleslaw.
