German coconut oatmeal cake

This is sooo good!  Found it online made some tweets and here it is. The topping is very similar to German chocolate cake icing. It was easy to make and makes the house smell fantastic while it's baking.  Cinnamon gets me every time!  I hope you enjoy this as much as I did.  This was desert for loaded baked potato soup and grilled roast beef and cheese sandwiches with caramelized onions.  Warm and delicious during this snow storm.

1 cup rolled oats (NOT quick cooking oats)
1 1/4 cups water
1/2 cup butter
1 cup brown sugar
1 cup sugar
2 whole eggs
1 1/2 cups flour
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking soda


TOPPING:
1/4 cup butter
3 Tbs milk
3/4 cup brown sugar
1 cup shredded sweetened coconut
1 cup chopped walnuts


Bring water to a boil and add oats. Let stand for 20 minutes. Meanwhile cream eggs, butter and sugar. Sift together the dry ingredients and add to the creamed mixtures. Stir in the oats. Bake in a greased sheet cake pan at 350 for 35 minutes. Let the cake cool just a bit before putting on the topping.


Topping: Mix the 6 tbsp butter and 2 tbsp milk in a sauce pan. Heat until warm. Add the brown sugar and heat until boiling, stirring constantly. Add the chopped nuts and coconut. Spread on the still warm cake.

Apple bread with a brown sugar glaze

This bread is really good warmed up on a cold day with butter.

  •  1 cup sour cream
  •  1 cup brown sugar
  •  2 eggs
  •  2 tsp vanilla
  •  2 cups flour
  •  2 tsp baking powder
  •  1/2 tsp baking soda
  •  1/2 tsp salt
  •  1 1/2 cups Granny Smith apples, peeled and finely chopped
  •  For the praline sauce:
  •  ¼ cup brown sugar and ¼ cup butter
  1. Bread: Preheat the oven to 350 degrees. Lightly grease a 9x5x3" loaf pan. Set aside.
  2. Using an electric mixer, beat together the sour cream, sugar, eggs and vanilla on low speed for a couple of minutes until well blended. Stop the mixer and then add in the flour leavening agents and salt. Continue to beat on low until well combined.
  3. Fold in the apples and half the nuts into the batter. Transfer the batter into the greased loaf pan. Sprinkle the rest of the nuts on top and then press them lightly into the batter. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  4. Cool in the loaf pan for about 20 - 30 minutes and then transfer to a wire rack to cool completely. So it doesn't get too dark, I suggest using a light colored loaf pan.
  5. FOR THE PRALINE SAUCE: In a small sauce pan, place the butter and brown sugar. Using medium heat, bring to a boil. Lower the heat and then simmer lightly for about one minute, stirring constantly until the sauce thickens. Remove from heat and then drizzle over the bread. Cool completely.

Breakfast Casserole

My sister in law gets credit for this recipe.  It's a Christmas tradition in our family now.  I can make this the night before and just pop into the oven Christmas morning and voila breakfast.  I serve with fruit and even bisquits.  Next time I might add some caramelized onions.

Breakfast Casserole

4 eggs
2 cups milk
6 slices of bread toasted & cubed
1 roll jimmy dean pork sausage
8oz. cheddar cheese

Place bread, sausage and cheese into 13x9 baking dish.  Mix eggs, milk and salt.  Pour over bread mixture.  Cover and place in refrigerator overnight .

Bake covered for 45 min.  On 350 degrees.  Uncover and bake 30 more minutes and serve.
