This is a recipe I got from my mother. It's quick and easy. It makes 2 smaller cheesecakes or 1 larger cheesecake. It's very rich so I usually make 2. Just make sure you refrigerate the cheese cakes for a few hours before serving. I have also made this as a dip. Just make filling and pour blueberry pie filling on top. Serve with graham cracker stix.
2 graham cracker pie crust, ready made
1 12oz. Cool whip ( I use light or free)
1 can blueberry pie filling (can use cherry or whatever you like)
2 bananas sliced
1 cup of sugar
8 oz cream cheese
In mixer combine sugar and cream cheese. Mix well. Gently fold in whip cream. If you over mix it will be soup. Open crust and line with bananas. Pour 1/2 of filling mixture into each crust. Top with pie filling and refrigerate.
***skip the bananas if you want to.
No bake cheesecake!
